Poutine Breakfast Burrito with Chorizo 
Help your guests start the day off right with this early morning special. Crispy hash browns, scrambled eggs, crumbled chorizo, cheese curds with chipotle maple gravy and pico de gallo; All wrapped in a griddled flour tortilla.

French Onion Poutine Burger
A French classic meets a Canadian staple. Short rib blend burger, melted gruyere, caramelized onion gravy and seasoned waffle fries all stacked on a potato bun.

Falafel Poutine Pita 
Middle Eastern spices combine with Western cuisine. An overstuffed pita filled with crispy lemon potatoes, falafel, griddled halloumi, pickled turnips, banana peppers, Za’tar gravy and a drizzle of garlic aioli.

Better the Basics

Fries

1. Double frying fresh cut potatoes keeps them crispy on the outside and fluffy on the inside.

2. Choose the right potatoes for the right dish- for example, consider tater tots for breakfast poutine, sweet potato fries for a sweet twist, or wedges for a hearty option.

3. While it's important to make sure your fries are always seasoned, keep in mind the other ingredients that will be added to the dish and how much salt they might add. For example, consider seasoning with Tajin for a Mexican flavour profile.

4. Filter your frying oil daily for the freshest tasting fries.

Cheese Curds

1. Fresh cheese curds should arrive daily and be held at room temperature to achieve the perfect "squeak".

2. A hot gravy ensures that your curds get soft and begin to melt with the right amount of "pull".

3. While cheese curds are the classic staple, consider other cheeses that fit the dish, like halloumi for a shawarma poutine, cotija for a Mexican poutine, or sharp cheddar for a breakfast poutine.

Gravy

1. If you start with one base gravy, it's easy to create batches of other seasoned and flavoured varieties, such as Za'atar gravy, chipotle maple gravy, or red wine gravy.

2. Consider using alternative sauces in place of classic poutine gravy, like demi-glace, hollandaise, peppercorn sauce, or beef gravy

3. As guests are looking for more vegetarian options, consider starting with a plant-based gravy, like Knorr Professional Brown Gravy, which is perfect for vegetarians and meat-eaters alike.

4. In addition to poutine gravy, consider a creamy drizzle sauce atop your poutine, like Ranch dressing, Hellmann's Ancho Chipotle Sauce, Hellmann's Spicy Mayo, or any flavoured aioli for added appeal and decadence.
