Prepare the Spicy Lemon Za’atar Dressing

Prepare the Cauliflower

  • Cauliflower, cut into florets 2.0 heads
  • Prepared Jamaican Jerk Sauce 120.0 ml

Prepare the Chick Peas

  • Baharat seasoning 1.5 g
  • Salt, as needed
  • Chick peas, rinsed, drained, patted dry 2.0 cans (485 g)

Prepare the Salad

  • Purple kale, chiffonade 670.0 g
  • Red onion, shaved 670.0 g
  • Yellow cherry tomatoes, halved 725.0 g
  • Gouda cheese, smoked, shredded 250.0 g

BBQ roasted cauliflower, fried chick peas, purple kale and smoked Gouda tossed in a zesty fusion of Caribbean and Middle eastern Lemon Za’tar Dressing with pickled jalapeno.

Preparation

  1. Prepare the Spicy Lemon Za’atar Dressing

    • Combine the Hellmann’s Lemon Za’atar Dressing with pickled jalapeno, whisk well, set aside.
  2. Prepare the Cauliflower

    • Roast the cauliflower florets on a parchment lined sheet pan at 200°C until golden brown. Toss with prepared Jamaican Jerk Sauce. Set aside.
  3. Prepare the Chick Peas

    • Fry chick peas until crisp. Toss with Baharat seasoning. Season with salt.
  4. Prepare the Salad

    • For each portion, combine 100 g roasted jerk cauliflower, 67 g purple kale,7.5 g red onion, 75 g yellow cherry tomatoes, 50 g fried chick peas, and 25 g Gouda cheese with 12 g Spicy Lemon Za’atar Dressing. Toss well. Arrange in a bowl and serve.
