  1. Prepare the Sauce

    • Bring culinary cream and water to a low simmer.
    • Fold in grated cheeses. Hot hold, covered, for service.
  2. To Assemble One Portion

    • Fry 225 g of preferred French fries until crisp.
    • Ladle 225 g of cheese sauce over the hot fries. 
    • Top with 43 g ounce heated chorizo, Ancho Chipotle Sauce, pico de gallo, pickled peppers, and cilantro. 
    • Garnish with lime wedge and serve immediately.
